“Chocked full of iron” smoothie

I’ve not been too well lately and I’m beginning to wonder if my lack of land-animal-eating is causing me some grief. My GP did write me up for some blood tests to check my iron levels a while back but I’ve been neglectful and not had them done yet………shame on me.

When I first went off the red and white stuff I was eating a lot of lentils, beans and tofu and was feeling great. The last couple of weeks though my diet’s been a little ho hum and I’m fairly confident that I’m now paying the price for my neglect.  In an attempt to rectify some wrongs I did a little research to see what I could throw into a smoothie to get a good iron hit, my result – a delicious green “Chocked full of iron” smoothie. I hope you enjoy!

A delicious green vegan smoothie that will provide you with a bit of an iron hit

Ingredients
  1. 1/2 cup coconut water
  2. 2 handfuls baby kale
  3. 1 kiwi fruit
  4. 1 banana
  5. 1 teaspoon Vital Greens
  6. 1 teaspoon chia seeds
  7. 2 teaspoons LSA
Instructions
  1. Peel and roughly slice banana and kiwi fruit
  2. Place all ingredients in blender and blend until smooth
  3. Serve in a tall glass
Notes
  1. I take Vital Greens every day, if I've not already had them I will add them to my smoothie - feel free to omit if you wish.

    Hi Susan,
    Thanx for the smoothie recipe. I wonder do you ever eat kiwi fruit with skin in?! I’ve learnt to do it and find it ok as long as I slice it up. The skin may not go so well in a smoothie though!?

      HI Lisa! Thanks for the comment 🙂 I always eat kiwi fruit with the skin on – always take it off for my smoothies though – my little ladies (my chickens) love to eat it. Thanks for stopping by, take care of you xo
